Made Navajo Fry Bread (more commonly referred to as Indian tacos) for a family dinner. I’ve been making it ever since I met many friends from Paiute and Shoshone tribes when I lived in the small town of Bishop, CA. It was there that I learned how to make this heartwarming dish with a bit of a Mexican flair. This recipe came about during the “long walk” that took place around the mid 1800’s when indigenous people were forced to relocate. They were given government rations of flour, salt and lard. They used these items to make a soft, fluffy bread (similar to a thick and fluffy flour tortilla) that can be served as part of a meal or for a dessert. I add layers of refried beans, ground beef, turkey or chicken seasoned with taco seasoning, shredded lettuce, cheese, chopped tomatoes and chopped onions. Sometimes I’ll make pico de gallo” as a topper. I also enjoy with slow cooked pinto beans (more traditional) instead of the refried beans my family prefers. They’re a family favorite!
