Good morning! Last night was family dinner night with my cousin Diane, her husband Larry, son Steven, daughter-in-law Audrey and their grandchild Margot Elizabeth. Just to give you some background, I was born and raised in Pittsburgh, Pennsylvania and have lived in Boston, Massachusetts, San Francisco, California and now in Denver, Colorado. Given that this would be the last family dinner together, because they are returning to Pittsburgh, I made baked Tilapia with Linguini Carbonara. What I've captured below is the Tilapia recipe. Baked Tilapia with Butter, Lemon Juice and Garlic 4 (6-oz.) Tilapia Fillets (cut in half) Kosher salt and freshly ground black pepper 4 tbsp. Butter, melted 2 cloves Garlic, minced Zest from one Lemon 1/4 Cup Lemon Juice Freshly chopped parsley, for garnish Placed the Tilapia fillets in a greased baking dish. Generously salt and pepper the fillets. Melt the butter in a small saucepan, adding the 1/4 cup of lemon juice and zest. Reduce this mixture by one-third. Add the garlic. Pour this mixture over the fillets. Bake in a 425-degree oven for 12-15 minutes until the internal temperature reaches 145 degrees. Bon Appetit and Enjoy! #trustedprairian #recipe #Tilapia
