Made a fresh batch of Pimento Cheese this morning. Homemade Pimento Cheese Spread. 2 cups grated sharp cheddar 8 oz cream cheese at room temp 1/2 cup mayo (I use Duke's) 1/4 teaspoon Onion powder 1/4 teaspoon Garlic powder 4 oz jar diced pimentos DRAINED Salt to taste Instructions are for a Kitchenaid mixer. Use the paddle NOT the whisk. Mix it on high, stopping to scrape the sides, just keep doing this until it tastes right. Thats it really. Let it sit in the fridge overnight. You can use it right away but honestly letting it sit for 24 hours really brings out the flavor. I started making my own when the stores stopped selling it around this area. But I think this tastes better anyway. The way it is, its a spread. But if you want to make a log out of it, just omit the mayo and then use plastic wrap to form it into a log.
